The rainy season in Japan has finally ended, and the peak of summer is upon us. In this sweltering heat, there's nothing quite like quenching your thirst with a chilled tea to refresh your body. In ISSO TEA SCHOOL vol.3, we would like to introduce a "Cold Brew Green Tea Recipe" that is perfect for these hot days.


What is cold-brew green tea?

Cold brew green tea is made by placing tea leaves in a bottle filled with plenty of water. Even with the same tea leaves, the taste, aroma, and extracted components can vary depending on the temperature of the water used.

Features of Cold Brew Green Tea

1. Mild Sweetness and Umami, with Relaxing Effects

Cold brewing extracts a higher amount of theanine, the umami component, resulting in a tea with a mild sweetness and rich umami flavor. Theanine also has stress-relieving and relaxing effects.

2. Reduced Bitterness, Astringency, and Caffeine

Cold brewing minimizes the extraction of epigallocatechin gallate (EGCG) and caffeine, which are responsible for bitterness and astringency. This makes it a great option for those concerned about caffeine intake.

3. Potential Immune Boost

Epigallocatechin (EGC), which is gently extracted even at low temperatures, can activate macrophages, a type of white blood cell in the immune system, potentially boosting immunity.


Cold Brew Green Tea Recipe

Making cold brew green tea is simple.

For Loose Leaf Tea

Ingredients:

  • Water (soft water) : approximately 500ml
  • ISSO TEA loose leaf tea: approximately 5g
  • Bottle
  • (Tea strainer)

For Teabags

Ingredients:

  • Water (soft water) : approximately 350ml
  • ISSO TEA tea bag: 1 bag
  • Bottle
1. Fill a bottle with the appropriate amount of cold water and add the loose leaf tea or a tea bag with the tag removed.
2. Place it in the refrigerator for at least 3 hours or overnight.
3. Lightly shake the bottle or stir with a stick to ensure an even concentration.
4. For Loose Leaf Tea: If the bottle has a filter, pour directly. If not, use a tea strainer when pouring.
For Tea Bags: Remove the tea bag or leave it in and consume it soon while keeping it chilled.
For an extra chill, add ice as desired.
