Iwai-Kuro is a large black soybean that represents Hokkaido. Known for its remarkably large size and strong natural sweetness, it is cultivated on the expansive lands of Hokkaido using mineral-rich mountain water and organic fertilizers, including nutrient-dense compost from livestock.
The seeds are sown in mid-May, and the harvest takes place in early October. As a single annual crop in Hokkaido, great care is taken throughout the growing process, from meticulous weeding to minimizing losses during harvesting. The mature black soybeans are not only large and sweet but also exceptionally flavorful.
